A specialty of Modena, Italy, balsamic vinegar is made from white Trebbiano grape juice, cooked and concentrated, and aged in a series of barrels, each of a different wood, each wood imparting its own distinct flavors. Balsamic has a rich, mellow flavor, with a caramel sweetness, and a mild acidity. Use balsamic as a condiment, to drizzle over grilled meats and vegetables, or blend into refined vinaigrettes, to dress mixed greens.
